Do you enjoy eating vegan food? Are clean treats your thang? Try these bad boys out because they are so easy and so delicious.
INGREDIENTS
- 1/2cup maple syrup
- 1/2cup peanut butter
- 1/3cup of coconut flour
- 1tbs cornflour
- 6tbs cacao powder
FILLING
- 1/2cup peanut butter
- 2tbs maple syrup
- 30-45ml almond milk
FILLING METHOD
- Place the peanut butter and maple syrup in a mixing bowl and mix together with a spatula.
- Add a splash of plant based mixture if you are finding the mixture too thick, I did. Allow the mixture to sit to the side until the cookies cool.
COOKIE METHOD
- In a bowl, whisk up maple syrup & peanut butter into a thick paste
- Add in the flour, cornflour and cacao powder and fold in gently. Use a spatula to begin with but you will need to get your hands involved at some stage as the dough will get quite thick.
- Refrigerate the dough for 30mins
- Preheat the oven at 180 degrees.
- Divide the dough into two pieces and roll them out with a rolling pin. Using a round cookie cutter, cut the cookies out of the dough. Bring all the scraps together and continue this process until there is no more left.
- Bake for 12-15mins. let them cool on a rack.
- Place a tablespoon of peanut butter mixture on each half and then sandwich the two together, making the filling fill out to the sides of the cookies. You may want to use a knife to spread the filling around the cookie.
