SPICED FISH FILLET WITH ROAST VEGETABLES

Literally a 25min meal from start to finish. High in protein, High in fibre and low in preperation time.

INGREDIENTS

METHOD

  1. Pre heat the oven to 200 degrees, fan forced
  2. Chop the potatoes and sweet potatoes into quarters, place in a mixing bowl and add olive oil, 1tsp of the mixed herbs and toss well
  3. Place on a lined baking tray and place in the hot oven for 25mins
  4. Coat the fish in smoked paprika, mixed herbs and place in a fry pan with the tsp of nutalex and garlic, once the fish is in the fry pan add the ginger to the top
  5. Turn the fish over after about 4mins and cook for another 4mins with the lid on.
  6. Chop the cherry tomatoes and fresh parsley ready to plate up once the potatoes are finished roasting
  7. Enjoy!
