Need a better option than bread? Stuck for lunch time inspiration. This is something you can have fresh or I have meal prepped it and it worked a treat.
Slice the sweet potato in lengths as you would with a piece of bread, place them in a microwave safe dish and add the smallest amount of water. microwave for 4-5mins. Whilst they are in the microwave start up your sandwich press, to get it hot.
In a non-stick fry pan cook your piece/s of salmon add some pepper and salt and lemon for flavour if you wish. Cook the salmon for rough 15mins.
Once the sweet potato is done, lie them in the sandwich press and cook them until they are nice and crispy. Once both the salmon and sweet potato are ready, layer them up on a plate. Spread the kale pesto on first add the rest of the ingredients and season with pepper and salt adding the parsley and bean sprouts. Drizzle a little coconut amino’s over the top!
