This is quite easily the most nourishing meal you could possibly consume.

INGREDIENTS
- 1sml sweet potato
- 1tsp cinnamon
- 1tbs olive oil for roasting
- 1 punnet cherry tomatoes
- 400g green beans
- 1/2 avocado
- 250g brown rice, I use 90sec microwaveable rice
- Fresh parsley
- A drizzle of balsamic glaze for a dressing
METHOD
- Pre heat the oven to 180 degrees and cut & peel the sweet potato into small cube sizes
- Place on a lined baking tray and lightly coat in the oil and cinnamon, place in the oven for 30-40mins. Regularly checking on them
- Chop the top and ends off your green beans and place in a microwaveable dish with a little water and heat for 2mins, drain the water off
- Chop the rest of your veggies accordingly and get ready to stack your bowl
- Enjoy!
