In a frypan add a little olive oil, diced onion, diced pumpkin with the ginger and garlic. After 10mins add the spices and the tinned toms, stirring in the coconut milk and water will be added and let it. Add the lentils and allow it to simmer for 20mins. Add the kale at the end and serve with a tablespoon of coconut yoghurt. If you want to add some protein to the dish add some grilled chicken breast!!
