A great addition to any kiddies lunch box or even your own!
SERVES 12
INGREDIENTS
- 2 large ripe bananas
- 25g Botanika Blends protein powder (I used caramelised popcorn)
- 2 cups rolled oats (I use uncontaminated)
- 1 cup coconut yoghurt
- 2 eggs
- 4 tbs honey
- 1.5 cups of gluten free self raising flour
- 1tsp bicarb soda
- 1tsp vanilla essence
- 1 carton of blueberries
- 80g chocolate drops (I use sweet William’s)
METHOD
- Pre heat oven to 180 degrees. Place patty cake pans in a 12 hole muffin tray
- Using an electric mixers (blender is too much) whiz all the above ingredients together except for the blueberries and choc chips
- Seperate half the mixture into another mixing bowl add blueberries to one bowl and the chocolate chips to another
- Spoon the mixture into the patty cake pans and place in the oven for 20-25mins
- These muffins can be kept in the freezer and taken them out when needed which makes them even more lunchbox friendly and always on hand for a back up
