A great vegetarian dish or a lovely meat free dish for those who are not vegetarian.
Bring a saucepan of water to the boil and add your bag of edamame pasta (you will only need roughly 120g per serve when platting up) the rest can be used for meal prep. The pasta will only need 8mins in boiling water. Drain off the water and add 120g to your bowl, add the homemade pesto and quarter the cherry tomatoes and distribute evenly. Add the vegan parmesan and pine nuts last. I like to pan fry the pine nuts a little to really bring out a robust nutty flavour. PRESTO!
