This was a fail that ended up working in my favour. Simple but not missing out on big robust flavours, try this next time you have weekend guests or need to whip up something easy and healthy mid week.
Marinade the salmon first. Add all the ingredients into a Tupperware container and stir together. Add the salmon and place in the fridge to marinade for at least an hour.
Once that has marinated cook the salmon in a fry pan. Once cooked, cut up into chunks and construct the deconstructed salad.
On a platter layer your salad mix. Starting with the washed lettuce leaves on the bottom, coriander, spring onions, pomegranate, sesame seeds, sprouts and then the salmon and more coriander and sprouts for a bit of jazz.
