This was literally all made with leftovers and it turned out to be one of the best meals I have made.
SERVES 2
INGREDIENTS
- 220G chicken breast
- 40G Chorizo sausage
- 1 pack of tortilla’s, I used the Woolworths
- 1tsp honey
- 1/2 avocado
- Kale or spinach leaves
- Red cabbage
- Shredded cheese – ‘Grated Sheese’ from Woolworths for a dairy free option
- Fresh coriander or parsley on top
METHOD
- Cook the chicken breast or use a hot chook from Woolworths for convenience
- Cut the chorizo sausage into small pieces and add them to a frying pan and drizzle the honey over the top
- Once the protein is cooked, zap the tortilla in the microwave for 30 secs
- Start to build your taco’s from the bottom up
