ONE FRY PAN AND THAT’S IT!! POACHED HERB SALMON 🤩
SERVES 3-4
INGREDIENTS
- 3 salmon fillets, either skin on or off
- 1 lemon, sliced
- Fresh dill
- Fresh Keffir lime leaves
- 1tsp garlic, minced
- 1tsp ginger, minced
- 1 350ml can coconut milk
- 1/2-1 tsp chilli flakes, semi dried
- pepper & salt to season
- coconut/olive oil spray
METHOD
- Using a large frypan, spray a little coconut oil on the bottom
- Fry off the garlic and ginger
- Once you smell an aromatic smell add the coconut milk and turn your frypan down to a low heat
- Add the rest of the ingredients and leave the salmon until last and lemon goes on top
- Place the lid on and cook for a further 5mins to help to salmon cook through
- I served this dish with sweet potato and a warm quinoa salad
