Serves 4
INGREDIENTS
- 2tbs flaxseed meal
- 250g lean lamb mince
- 1 egg, beaten
- 1 small onion, chopped finely
- Roughly chopped mint & parsley
- Coconut oil or olive oil
- 200g spinach leaves
- 1 small red onion, cut into thin wedges
- 125g cherry tomatoes, halved
- 1/3 cup chopped parsley
- 1/4 cup mint leaves
- 2tbs pomegranate seeds
Spiced Yoghurt
- 1 cup of dairy free or Greek style yoghurt
- 2 fresh red chillies, chopped finely
- 1tbs chopped parsley & mint
- 1 clove garlic, crushed
- 1/2tsp ground cumin
METHOD
- Add the mince, flaxseed meal, parsley, egg and onion into a large mixing bowl
- Start mixing with your hands, get in there!!
- Once thoroughly mixed together, roll into a good sized ball and place on a baking tray and place in the fridge for 30mins
- Make the salad
- Cook the kofta’s in a well oiled fry pan
- While they cook, make the yoghurt mix
- Serve & enjoy
