Such an antioxidant filled spread, something that is so versatile and delicious that you can put it in most things!
- 200g+ kale
- 3tbs olive oil
- 1/2 fresh chilli (optional)
- 2 cloves of garlic
- 1 bunch of fresh parsley
- 80g toasted pine nuts
- a drizzle of filtered water
- pepper and salt
Super easy. Blend all ingredients together in a food processor however you do need to toast the pine nuts first in a fry pan before adding them as that will really bring out a nice nutty flavour.
Whiz for a good, consistency 2-3mins. PESTO…I mean PRESTO!
This will keep in the fridge for quite a while as the oil will preserve it. When I say a while I mean at least 2wks. You can add it to your GF pasta dishes, spreads on anything including rice cakes and wraps. It really is so useful!
