Need to do something with that left over chicken from meal prep?? This is a worth while way to do it.
- 250g of leftover chicken breast
- 250ml coconut milk (canned)
- 1 whole leek
- 1tsp olive oil
- 1tsp turmeric
- 1tsp crushed garlic
- a drizzle of vegetable stock
- 1 egg
- black sesame seeds
- 1 sheet Gluten free puff pastry (I brought mine from All about Empathy)
pre-heat the oven to 180 degrees. Sauté the sliced leek and crushed garlic with a tsp of olive oil and let it reduce and then add the chicken to bring it back to life. Add the coconut milk, stock and the turmeric and turn the heat down to low and cook for a further 10-15mins.
In an oven proof dish add the contents of the pie and then add the pastry to the top. In a coffee mug crack 1 egg and whisk, paint the top of the pie with the egg wash and then sprinkle over the black sesame seeds.
Place in the oven for roughly 25-30mins.
