Ham and Minted Pea Salad
Spinach leaves or rocket leaves
Thinly sliced red onion
Roast vegetable Frittata
Leftover roast veggies

Thinly slice the leftover roast veggies into round circles and place at the bottom of a round baking dish, 28cm will do the trick. Mix 8-10 eggs together with pepper and salt and fresh parsley with garlic. Pour over the top of the veggies and than sprinkle with spring onions. Place in the oven for 20mins.

Leftover brussels sprouts
2 tbs olive oil
100g fresh cranberries Cut the potatoes into 3cm chunks, chop the bottom off the brussel sprouts and cut the bacon into cubes. Place all ingredients into the baking dish and roast at 180 degrees, lightly drizzle the olive oil over the ingredients and place in the oven for 45-mins to an hour. Depending on whether your potatoes are already cooked!
