– 1 cup almond butter
– 1/4 cup rice malt syrup
– 2tbs coconut flour
– 1/2-1 cup dark chocolate ( I used vegan chocolate)
Mix together almond butter and rice malt syrup until firmly combined and smooth. Add coconut flour and stir until almond butter begins to thicken and turns into a dough.
Roll into balls and place on a tray lined with baking paper. Place in the fridge to set for 30mins. Melt the chocolate on the stove top and be careful not to burn it. Once the balls have set in the fridge than dip them into the chocolate and place back on the tray and place in the fridge to set.
These beautiful treats are gluten free and are high in healthy fats and proteins which will help give you sustained energy as well as you fill you up. And don’t forget the dark chocolate that contains antioxidants and minerals such as magnesium, iron and manganese. So these truffles are a sweet treat that you can feel great about eating!!
